Low-Carb Gluten Free Bread

This gluten free bread was a bit of a gamble but the result was way better than I expected with it’s delicious taste and wholesomeness.

Not only is it really healthy, but this gluten free bread is also low-carb and provides you with a tasty, wholesome alternative to traditional unhealthy bread.

Being able to eat bread that is totally gluten free is really important to many people as gluten (a protein found in wheat, barley, rye & malts) cannot be digested properly leaving you bloated, achy & lethargic.

Often you’ll discover a gluten free bread recipe that looks great but turns out to produce dry & crumbly bread which is definitely not the case with this one.

Being a low-carb, and gluten free bread recipe, I felt that the full cream yogurt ingredient would help keep it from getting dry and give it an enjoyable rich texture.

So try out this tasty gluten free bread recipe, which I’m sure you’ll love it.

Gluten Free Bread Recipe

Ingredients

  • 2 cups tapioca flour
  • 2 cups flaxseed powder (linseed powder)
  • 1½ teaspoon bi-carb/ baking soda
  • ½ cup sunflower seeds *
  • 500ml plain full cream yogurt
  • 2 tablespoons raw honey
  • *Sunflower seeds can be replaced with dried cranberries or dried blueberries for a sweet loaf

Method

  • Preheat oven to 200 C
  • Grease and line loaf pan
  • Mix all ingredients together
  • Place mixture in pan and press down and level
  • Cover with foil
  • Leave to stand for 45 minutes
  • Bake for approximately 50 – 60 minutes
  • Cool in pan before turning out onto cooling rack
  • Slice and enjoy with unsalted organic butter

You can also slice and toast this bread for a tea time treat or wholesome snack.

Flaxseed In This Gluten Free Bread Recipe

Whilst it’s been called one of the most important foods on earth, flaxseed was believed to have been cultivated back in 3000 BC, which may or may not be true, but its been known as a top ingredient for many years.

Its also been said that King Charlemagne, back in the 8th century, was so convinced in the amazing flaxseed health benefits that he even passed laws to force his subjects to consume it.

Now in the 21st century some experts seem to concur with the king by saying that there is evidence suggesting that it is one of the superfoods or nutrients.

Therefor, as flaxseed is one of the main ingredients in this wholesome bread recipe, I thought it may be appropriate to list some of the health benefits this nutrient offers, below.

8 Flaxseed Benefits

  1. Flaxseed is rich in lignans which have are great antioxidants and contain plant estrogen.
  2. High in omega-3 essential fatty acids
  3. Rich in fibre
  4. Cancer – it’s been suggested by Kelley C. Fitzpatrick, director of health and nutrition with the Flax Council of Canada, that flaxseed may protect against breast cancer, prostate cancer, and colon cancer.
  5. Cardiovascular disease -the omega-3 content in flaxseed reduces the hardening of arteries as well as preventing plaque deposits in the arteries and according to Fitzpatrick, “Lignans in flaxseed have been shown to reduce atherosclerotic plaque buildup by up to 75%,”.
  6. Lower blood pressure – Fitzpatrick suggests that consumption of flaxseed causes significant reduction of blood pressure which is due to the omega-3 fatty acids as well as the amino acid groups contained in flaxseed.
  7. Diabetes – Daily consumption of flaxseed may lower, or normalise, blood sugar and reverse diabetes.
  8. Inflammation which is often the root cause of many diseases, however inflammation may be significantly reduced by the two components in flaxseed, ALA and lignans, may reduce the inflammation by preventing the release of certain pro-inflammatory agents.

Please note that neither pregnant women nor breast feeding mothers should consume flaxseeds or ground flaxseed until more research has been conducted in this area.

Lastly, to get all the flaxseed benefits, it’s better to use the actual seed in this low carb gluten free bread rather than the flaxseed oil as this doesn’t have all the qualities of the seed.
