Ingredients:
- 2 cups almond flour
- 3/4 cup granulated erythritol
- 1/2 tsp cinnamon
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/4 cup heavy cream
Instructions
- Preheat your oven to 325°F (160°C).
- Grease a 9-inch springform pan with butter.
- In a bowl, mix the almond flour and cinnamon.
- Add the melted butter and stir until well combined.
- Press the mixture into the bottom of the prepared pan and bake for 10 minutes, then set aside to cool.
- In a large bowl, beat the cream cheese and 3/4 cup erythritol with an electric mixer until smooth.
- Add the eggs, one at a time, mixing well after each addition.
- Mix in the vanilla extract, sour cream, and heavy cream until well combined.
- Pour the mixture over the cooled crust and smooth the top.
- Bake for 50-55 minutes or until the edges are set but the center is still slightly jiggly.
- Leave it to cool to room temperature, then allow it to chill in the fridge for at least 2 hours before serving.
