Keto Cloud Bread

Keto cloud bread, also known as Oopsie Bread, is the perfect healthy substitute for the unhealthy high-carb variety as well as being totally Keto, Banting & Paleo diet friendly.

Incidentally, whilst it’s called Keto cloud bread, it’s commonly known as “Oopsie Bread” as it was originally intended to be something completely different but the chef ended up with this.

I, for one, am really pleased this unintentional “oops” mistake was made, otherwise we would never have been blessed with this awesome Keto Cloud Bread.

I can also imagine why it’s called cloud bread as it’s so incredibly light and fluffy.

Not only is this low-carb cloud bread, sugar free and 100% Keto approved, it’s also packed with of all the good stuff including those essential healthy saturated fats.

Furthermore, it doesn’t contain any flour whatsoever, not even the healthy low-carb coconut or almond versions.

Keto Cloud Bread Recipe (Oopsie Bread)

Keto Cloud Bread Ingredients

  • 3 eggs
  • 115 grams cream cheese
  • 1/2 teaspoon psyllium husk powder
  • 1/2 teaspoon baking powder
  • Pinch of salt

Method

  • Preheat the oven to 150
  • Separate eggs
  • Beat the egg whites and cream of tartar  – must be very stiff.
  • In a separate bowl beat together the egg yolks, cream cheese, psyllium husk powder, baking powder and salt.
  • Gently fold the egg whites into the yolk mixture a little at a time.  Take care not to over mix.
  • Line the baking tray with baking paper.
  • Add dollops of mixture in circles, about 1cm thick.  Take care to leave a little space between each circle.
  • Bake for 20 – 25 minutes until lightly golden.

Sweeteners?

If you’re thinking of adding a sweetener like stevia or agave, personally I don’t think it’s needed as the cream cheese gives it its great flavour.

You could use Greek yogurt or cottage cheese, instead of cream cheese, for a slightly different taste.

Whatever you choose, they’ll still be these light & fluffy tasty delights.

What’s Great About This Oopsie Bread

  • It’s a very low-carb bread (almost zero carbs) which anyone watching their weight will love, however being low-carb offers many health benefits too.
  • It only takes about 30 minutes to make, of which most of that time is spent in the oven.
  • You can eat as much of it as you like as it’s not fattening or unhealthy – in fact it’s so light & tasty, it’s hard to stop.
  • You can use it in many ways – as a veggie burger (below), as a snack with with butter or as a mini-pizza with your favourite low-carb toppings.
  • My favourite way of eating these low-carb cloud bread “patties” is using them in place of burger buns and filling them with avo, cheese, lettuce and any other Keto foods that tickle your fancy, as you can see below.

The patties are very versatile as you can use them as a sliced bread substitute for sandwiches or as bun replacements in burgers.

Whilst they’re Keto & Banting diet friendly, they’re also very low in calories which is useful to know if you’re managing your weight as calories always matter.

Lastly, if you’re missing bread on your low-carb Keto, Banting or Paleo diet, this is your answer.

It reminds me of that great feeling of eating slices of white bread with butter & jam, I used to experience many moons ago, except devouring this Oopsie bread doesn’t cause weight gain or gut issues.

This is one my favourite ways of devouring these awesome Keto Cloud Bread patties.

Packing two of them with avo, bacon, lettuce, olive oil and anything else you want, makes a delicious Keto burger.

Furthermore, this Oopsie bread burger is packed with the goodness and healthy fats your body loves (not the bad Trans-Fats).

If you don’t want to go to those lengths you can just warm them up slightly, butter them and eat them just like that.
