Sweet Potato Tofu Curry Recipe

Ingredients

  • 1 Tablespoon olive oil
  • 1 Onion – chopped
  • 1 Tablespoon fresh ginger – grated
  • 2 Teaspoons fresh garlic – chopped
  • 3 Cups peeled and chopped sweet potato
  • 1 Tin tomatoes – chopped
  • 3 Teaspoons mild curry powder
  • 1 Cup vegetable stock
  • 1 Cup frozen peas
  • 350 grams firm, fresh tofu
  • Salt and pepper as required

Method

  • Heat the olive oil in a large frying pan
  • Add the onion, garlic and ginger
  • Cook until it’s soft
  • Add the sweet potatoes
  • Add the curry powder, tin tomatoes and vegetable stock
  • Stir to combine the ingredients
  • Bring the mixture to the boil and then reduce the heat
  • Cook until the sweet potatoes are soft, which will take approximately 20 minutes
  • Add the peas and season to taste with salt and pepper
  • Add the tofu after cutting it up into large blocks
  • Stir gently
  • Heat through for 2 to 3 minutes before serving
  • Best served with coconut infused basmati rice
