  • 1 cup almond flour

  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup sugar-free chocolate chips

Method

  1. Preheat your oven to 350°F (180°C).
  2. In a medium bowl, whisk together the almond flour, cocoa powder, salt, and baking soda.
  3. In a separate large bowl, beat the melted butter, erythritol, and vanilla extract until well combined.
  4. Beat the egg until the mixture is smooth.

  6. Stir in the chocolate chips.
  7. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Bake the cookies for 8-10 minutes, or until they are set and the edges are slightly crispy.
  9. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
