They’re a perfect alternative to eggs for breakfast or for a healthy Banting tea time treat
Pumpkin Fritters Recipe (Banting Pancakes)
Ingredients
- 250ml cooked mashed pumpkin
- 250ml cream cheese
- 2 eggs (beaten)
- 1/2 teaspoon vanilla essence
- 80ml coconut flour
- 1 teaspoon baking powder
- Coconut oil for frying
Preparation
- Mix the pumpkin and cream cheese together
- Add the beater eggs and vanilla essence
- Mix in the coconut flour and baking powder
- In a pancake pan melt 2 teaspoons coconut oil
- Spoon a dessert spoon of mixture into the pan and cook gently
- When bubbles appear flip the pancake carefully
- Serve with sliced fresh strawberries and coconut cream
- Sprinkle with cinnamon (optional)
These low-carb Banting & Keto pumpkin fritters, also known as pampoenkoekies, are best served with some freshly sliced strawberries and coconut cream.
I don’t think they need any sweetener, but if you want a sweeter tasting fritter then add a tablespoon of xylitol to the mixture.
