Banting Milk Tart Recipe
Ingredients
200g gluten free biscuits (unsweetened)
50g unsalted butter (organic/grass fed)
1.2 litres milk
½ teaspoon cinnamon
3 eggs (free range)
100g corn flour (borderline Banting) – Almond flour can be used as a substitute
100g xylitol (borderline Banting)
½ teaspoon vanilla extract
This Recipe Makes a 1 x Large Banting Milk Tart
Method
Grease a 23cm pie dish
Crush the gluten free biscuits to a fine crumb
Add 50g melted butter and mix together
Press the biscuit mixture evenly into the pie dish
Place in fridge to cool whilst preparing the filling
Place the milk, cinnamon and 50g butter in a saucepan
Bring to the boil
Remove saucepan from the heat
In a separate bowl, place the eggs, corn flour, xylitol and vanilla
Whisk well until no lumps remain
Mix a little of the warm milk mixture into the egg mixture beating well
Pour this into the rest of the milk mixture
Return to the heat and bring back to the boil whilst whisking
Continue until the filling has thickened
Pour into prepared biscuit base
Leave to cool
Refrigerate until set and ready to serve
Sprinkle cinnamon over the milk tart just before serving

I used to make an unsweetened version of this for my children when they were toddlers, about 30 years ago. No biscuit crumbs or cornflour needed. We call it an egg custard, and use nutmeg instead of cinnamon.
3 eggs, plus 1 egg yolk 1 teaspoon vanilla extract (optional) 450ml cream or half milk, half cream Freshly grated nutmeg Step 1 Preheat the oven to 170°C. Step 2 Lightly beat the eggs and vanilla extract together (if using) Step 3 Place the milk/cream in a pan Heat to just below boiling point then pour onto the eggs and stir to combine. Strain through a sieve into a buttered 1-litre (4-cup) capacity baking dish. Step 4 Place dish in a roasting pan half-filled with hot water.(Bain Marie) Sprinkle the top with nutmeg. Bake for about 30-35 minutes: it should still wobble slightly. Delicious warm or cold.

A more Banting friendly flour is almond flour which could possibly be used instead of the corn flour.
