Banting Gluten Free Cheese Muffins
There’s nuffin’ like a muffin especially if they’re healthy Banting muffins.
What’s more is that these Banting muffins are not only light & tasty, but they’re also gluten free as well as sugar free.
Luckily for us, dairy is Banting friendly so you don’t have to feel guilty about adding a decent dollop of butter (grass fed of course) to these cheese muffins.
However, if you’re worried about your weight you really don’t need to pile on any butter at all as these muffins are really light & tasty without anything extra.
Banting Cheese Muffin Recipe
Ingredients
- 500ml gluten free flour
- 20ml baking powder
- 5ml salt
- 250ml grated cheese
- 2 eggs
- 100ml melted butter
- 250ml full cream milk
Method
- Preheat the oven to 200C
- Spray & grease muffin pan
- Mix together the flour, baking powder, salt & grated cheese
- Place the unsalted butter, eggs & milk in a separate bowl
- Beat well
- Add to dry ingredients and mix well
- Spoon into muffin pan, filling each ¾ full
- Bake for approximately 10 – 15minutes until golden brown
- Cool in tin for 5 minutes
These muffins are really light & tasty so they will make the perfect tasty snack just as they are.
If you aren’t worried about weight gain, spreading some lovely butter on them raises the delicious factor to a new level.
Grated cheese can also be sprinkled on if you wish.
To keep your Banting muffins fresh & tasty it’s best to store them in an airtight container.
