These cauliflower cheese toasties provide the perfect snack for anyone on a low-carb Banting & Keto diet and contain no bread or wheat.

If you’ve been missing toasted cheeses this cauliflower toast sandwich with warm cheese oozing out the sides will satisfy your bread craving.

In fact the cauliflower cheese toast not only tastes fantastic, it’s really filling and even better than regular white bread.

Try making some cauliflower toast for a batch of these delicious melted cheese cauliflower toasties.

If you prefer, you can substitute the cauliflower bread (toast) for this low carb flaxseed Banting bread recipe, but then you miss out on the cauliflower.

Cauliflower Cheese Toasties Recipe

IngredientsCauliflower Cheese Toast Recipe

  • 1 medium cauliflower
  • 3 eggs beaten
  • 1 cup grated mature cheddar cheese
  • ½ teaspoon oreganum (oregano)
  • Salt & pepper to taste
  • Olive oil for cooking
  • Extra 1 cup of grated cheese for filling

Method

  • Prepare cauliflower by either chopping finely or grate until fine like rice
  • Place in a bowl
  • Add the eggs, 1 cup of grated cheese, oreganum (also known as oregano, which has many health benefits) and salt & pepper – mix together
  • In a frying pan heat the olive oil
  • Place spoonful (approximately 125ml each) in the pan and shape like a slice of bread flattening with a spatula. I find it easier to fry two slices at a time
  • Cook over a gentle heat, for about 4 minutes Check the underside, when golden carefully turn both slices
  • Add the grated cheese to one of the slices and place the other slice on top
  • Cook until the cheese is melted. I flatten a little to help cooking along

This recipe makes 6 sandwiches.

If the cauliflower toast is very crumbly after your first attempt try adding another egg which will help bind it.

Cauliflower Toast Cheese Recipe

It’s a really versatile recipe as it can be made to have as a quick snack or, for a wholesome breakfast you could just add some bacon and avocado or have it for lunch with some healthy greens on the side.

I find that they go perfectly with a hearty bowl of vegetable soup.

It’s your choice but whatever you do you just have to try these cauliflower cheese toasties, they’re delicious.
