Cauliflower Soup Recipe

Ingredients

  • Olive oil
  • 2 cauliflowers
  • 500ml chicken stock
  • 250ml smooth cottage cheese
  • 2 teaspoons mustard
  • ½ teaspoon freshly chopped garlic
  • Salt and pepper
  • 200g diced bacon (substitute with chicken rashers if you prefer)

Method

  • In a large saucepan heat the oil
  • Chop cauliflower into small pieces and sauté in the olive oil for 5 minutes
  • Add the stock and simmer until cauliflower is soft. Add a little more stock if needed
  • Add the cottage cheese and mustard
  • Blend with a hand blender until smooth
  • Add salt and pepper to taste
  • Fry the diced bacon in olive oil until crispy
  • Serve soup warm with crispy bacon bits sprinkled on top

The bacon can be replaced with diced chicken rashers for those who don’t eat pork.
